Johann Baptist Schimmer (1797–1872) was an Austrian coffeeman and businessman who operated during Vienna's emergence as a major European cultural and commercial center. His work in the coffee trade connected him to one of Vienna's most distinctive and cherished social institutions—the Viennese coffeehouse.

Schimmer's career in the coffee business placed him within Vienna's merchant class and contributed to the city's social and economic life.
